What is a cookbook without some food related recipes? Here there is a couple of things that you can prepare while analyses are running.

Pizza

Dough

T is tablespoon, t is teaspoon, C is cup

1 T dry baker’s yeast.
0.5 t salt.
1 T honey.
1 C warm water but not too warm!
1 T sunflower oil.
3 C flour (2 white plain flour and 1 whole wheat or rye).

Mix first five ingredients together and let sit until bubbly. Stir in flour and then knead on a well-floured board, adding more flour if needed. Knead until smooth and even. Placed in an oiled medium-sized bowl, cover and put in a warm place to rise until doubled in size (approximately one hour). Preheat oven to 200C (400 F). Pat dough onto a greased pizza pan and put in the oven for five minutes. Allow to cool slightly and then spread a thin film of oil on top of partially cooked crust. Top with sauce and desired ingredients. Cook another ten to fifteen minutes or until bubbly.

The dough is suitable for freezing. Just cook the pizza dough for around twelve minutes instead of five.

Examples of topping

  • Pesto, cottage cheese, olives and mozzarella cheese.
  • Tomato paste, mozzarella cheese, shaved smoked salmon, capers, avocado and cherry tomatoes.
  • Tomato paste, ham, pineapple and banana.

Beef with plum sauce and Chinese greens

Olive oil (around 2 T)
Sesame oil (around 1T)
Freshly ground black pepper
1 4cm think piece of rump steak (around 500g)
12 eshallots
1 T Worcestershire sauce
1 C red wine
Half a cup of plum sauce
1 can of plums cut in half and pitted (drained)
2 bunches of Chinese greens (e.g., Choy Sum, Buk Shoi, Chinese Cabbage, etc)

Steak

Massage both sides of the steak in olive oil and pepper. Heat a large pan and cook the steak on each side for around 4 minutes, remove, put in a plate and cover with foil to keep it warm.

Plum sauce

Clean the pan and then add peeled eshallots and cook them until golden. Add Worcestershire sauce and wine and reduce by half. Add plum sauce and plums, bring slowly to the boil and reduce to a simmer.

Greens

Rinse the Chinese greens and cut into 5cm lengths. Heat a large pan, add sesame oil and toss greens over a high heat until wilted.

Serving

Cut the steak into slices and place on top of the greens. Top with plum sauce.

The plum sauce can be prepared in advance and stored a few days. It tastes even better.
